Ok just like the first guy said practice some Ollie's on flat ground first because sometimes when i ollie i try to hard and i lean a little so i lose my board. Also what might be the problem is that you could be thinking to much about landing it which will trick me sometimes, so what I do is don't think about how many stairs im jumping. Just relax try not to pop as hard and focus more on how smooth and clean your ollie is and act like your going over a 3 set or something.
